Operational Improvement and Strategic Review

In 2018 and 2019 THINK Hospitality partnered with the ownership of Petersham Nurseries to undertake a comprehensive review of its multi-site retail and restaurant operations in Covent Garden. The objective was to unlock significant commercial improvement, strengthen the operating model and secure long-term business viability for one of London’s most admired lifestyle and dining brands.
Our work included a full operational assessment, concept mix evaluation and in-depth analysis of the trading performance across the group’s restaurants, retail spaces and floral operations. THINK Hospitality developed a new strategic direction for the business, redefining the concept mix and establishing a more efficient and commercially robust operating model. This included restructuring key departments, refining guest experience touchpoints and appointing new leadership to drive delivery.
A major part of the programme was a rigorous cost-reduction initiative across labour, procurement and operational efficiencies. Combined with strategic repositioning and enhanced management capabilities, the project delivered substantial financial gains, achieving over £2 million in savings and improved profitability, alongside a notable uplift in revenue, setting the business on a path to renewed growth.
