Crieff Hydro is one of Scotland’s most iconic resort destinations, set within a 900-acre estate in Perthshire. With a 157-year legacy, strong family appeal and an extensive leisure offering, the resort needed a refreshed and future-focused food and beverage strategy to elevate guest experience and unlock new commercial opportunities.
THINK Hospitality partnered with the in-house team to define, develop and position six new dining and bar concepts, creating a cohesive portfolio aligned to guest profiles, day-part needs and high-value occasions. Our work encompassed concept definition, commercial modelling, guest journey mapping and full experience design, applying behavioural science, menu science and operational insight to optimise both guest satisfaction and profitability.
The new portfolio blends heritage with contemporary F&B innovation. Highlights include EAST, a bold Asian small plates restaurant, The Ballroom Bar, a theatrical speakeasy with immersive cocktails and The Winter Garden, a modern reimagining of the resort’s Victorian heart for all-day dining. Additional concepts such as Loggia bring light-filled, landscape-framed dining overlooking the Strathearn Valley.
Part of a wider £5 million investment in food and beverage, these new venues strengthen Crieff Hydro’s market position, broaden its appeal across demographics and create a compelling hospitality offer that matches the scale and ambition of the resort.
