Concept Development and Vendor Strategy for Groundbreaking Corporate Food Hall

In early 2024 THINK Hospitality supported Kerb, Compass and Danske Bank with the development and launch of a pioneering internal lunch food hall in the bank’s new 6,000-employee headquarters in central Copenhagen.
Kerb, the market-leading operator behind food halls such as Seven Dials in London, was commissioned by Compass to operate this innovative dining solution for Denmark’s largest bank. At the time Kerb had no operational presence in Denmark and engaged THINK Hospitality to provide strategic guidance, localisation and on-the-ground expertise.
With deep knowledge of Danish workplace dining culture, tax benefits, meal patterns and guest expectations, THINK Hospitality helped design a food hall concept specifically tailored for a corporate catering environment where employees consume a main meal daily. This required a fundamentally different approach from typical consumer-facing food halls, prioritising nutritional balance, menu rotation, service speed, consistency and long-term guest satisfaction.
We curated a longlist and subsequently a shortlist of potential local vendors, drafted a compelling pitch pack, approached candidates, facilitated engagement and hosted site tours within the developing HQ. Our structured process ensured that the final vendor selection aligned with Kerb’s quality standards, Compass’ operational requirements and Danske Bank’s employee experience goals.
When staff moved into the new headquarters on 1 April 2024, they discovered an internal food hall featuring nine high-quality vendors offering a wide variety of cuisine types. This elevated choice, breadth and diversity of offer delivered exactly what the bank envisioned when selecting a next-generation alternative to the traditional corporate canteen.
