Crieff Hydro is one of Scotland’s most iconic resorts, set within a 900-acre estate in the heart of Perthshire. With a 157-year history, a strong family-friendly focus, and a wide range of leisure activities, it remains a landmark destination blending heritage, adventure, and relaxation.

We collaborated with the in-house team to define and develop six new dining and bar concepts, creating a cohesive and balanced portfolio aligned to guest profiles and key occasions. Our work spanned concept definition, commercial development, guest journey mapping, and experience design, applying behavioural science and menu science techniques to optimise both guest satisfaction and commercial performance.

The transformation combined creativity with commerciality, delivering distinctive new venues that broaden the resort’s appeal and open new revenue streams. Standout highlights include EAST, a bold Asian small plates restaurant, and The Ballroom Bar, a hidden speakeasy with a theatrical entrance and immersive cocktail experiences. Other new spaces include The Winter Garden, a modern reimagining of the hotel’s Victorian heart for all-day dining, and Loggia, a light-filled venue overlooking the Strathearn Valley.

Part of a £5 million investment in food and beverage, these new openings have reshaped the resort’s dining landscape, elevating the guest experience and strengthening Crieff Hydro’s market position.
